hi! in regards to your dilemma about what oil to use, the rule of thumb i've found is to avoid using seed oil unless its wood-pressed and/or cold-pressed, which unfortunately is more expensive. usually olive oils is a safe one, since it comes from the 'fruit' for a lack of a better word.
also ghee is great as a cooking medium, if you're not vegan! a lot of indian stores usuallly sell them at better prices than mainstream supermarkets.

Thanks! Yeah I've always used a ton of olive oil in cold preparation & low heat cooking, but I only recently read that all seed oils are bad. I used to use canola oil in cooking quite a lot but now I use butter, ghee, olive oil & occasionally avocado oil. The main problem is that seed oils are in sooo much store bought stuff that I didn't even realize was unhealthy and ultraprocessed. They really add it to fucking everything it's so annoying! Even a lot of plant based milks which I thought were healthy are full of disgusting crap so I'm sticking to dairy milk now.

Morbid curiosity.
I’m fascinated by how toxic our food supply is and how some people are so determined to keep their heads in the sand. 
It’s an inconvenient truth, for sure. 
I wish more people were discussing the nuances. Some people barely eat vegetables or nuts, claiming that you should get the vast majority of your nutrition from animal fats. Some people claim you should just be cooking with butter and tallow all the time, not even olive and avocado oil. Some will not eat at a restaurant unless they call them up first and ask which oils they use. And some people stick their fingers in their ears and pretend there’s nothing fundamentally wrong with the way our food is processed, that it is all conspiratorial nonsense. And yet there are nuances. For example, eating something made with cold-pressed, high oleic sunflower oil is not that bad for you, whereas “industrial seed oils” commonly used to fry food at restaurants can be very harmful. But there is something to be said for the fact that our health has suffered greatly since seed oils became prevalent in our diets. 
I’m completely into raw dairy products, though. That’s one bandwagon I don’t see myself getting off. Even if long-term I don’t notice a drastic difference in my health or how I feel, just having milk with a delicious taste and knowing where the milk is coming from and that it’s from an ethical source and that it probably has much more nutritional content than pasteurized milk is enough benefit to keep buying it. 
The idiocy of the American diet is a topic that can get me going these days. I will talk someone’s ear off about it if they let me. And I find that the people I know are really receptive to these conversations. I get very sad and angry about it sometimes, but I also might be late to the game and things might be changing in a big way.
I would love to eventually open a coffee shop or something where everything I sell is ethically sourced and of at least decent nutritional value. Baking for myself, family, and coworkers already brings me a lot of satisfaction, especially when I bake with love, using high-quality ingredients. But the more I hear about how our food is harming our health, the more I feel like I have to do something on a larger scale. I want to make people happy while at the same time promoting their health and serving them things that make them feel well and not all sluggish or inflamed. I deeply fear making people momentarily happy but slowly poisoning them. But truly, this is something I would love to keep learning about.

Venezuelan Chicken Sandwiches with Avocado (Reina Pepiada Arepas)
Egg Free Nut-Free Soy-Free Gluten-Free Low Sodium
Ingredients    12 ounces boneless, skinless chicken breast    1¼ cups arepa flour (see Tips)    ½ teaspoon salt, divided    1½ cups warm water, plus more as needed    1 tablespoon canola oil
   1 ripe avocado    ¼ cup nonfat plain yogurt    Juice of 1 lime (2 Tbsp.)    ⅛ teaspoon ground pepper    2 scallions, finely chopped
Preparation    Preheat oven to 350°F. Place chicken in a medium saucepan; cover with cold water. Bring to a simmer over medium-high heat. Reduce heat to low, partially cover, and cook until an instant-read thermometer inserted in the thickest part registers 165°F, 12 to 15 minutes. Transfer to a plate. Meanwhile, combine arepa flour and ¼ tsp. salt in a medium bowl. Slowly add 1½ cups warm water, mixing with your hands until a smooth dough comes together (see Tips). Knead for 1 minute. Shape the dough into a ball (it will have the texture of mashed potatoes). Cover with a clean kitchen towel and let rest for 5 minutes. Divide the dough into 4 equal pieces (about ½ cup each). Shape each piece into a disk, 3½ inches in diameter and ⅜ inch thick, by pressing it between your palms (see Tips). Brush a large oven-safe nonstick skillet with oil and heat over medium-high heat. Add the 4 disks and cook until the undersides are beginning to show golden flecks, about 3 minutes. Flip the arepas and repeat on the other side. Transfer the pan to the oven. Bake until the arepas are cooked through and slightly puffed, 12 to 15 minutes. Meanwhile, shred the chicken. Halve avocado and scoop into a medium bowl. Add yogurt, lime juice, the remaining ¼ tsp. salt, and pepper. Mash with a fork until smooth. Stir in the chicken and scallions. Slice each arepa in half crosswise to open a pocket (like a pita bread). Divide the chicken salad among the arepas and serve immediately.
   Tips: Arepa flour is precooked cornmeal. It is not the same as regular cornmeal or masa harina (the cornmeal used to make tortillas), neither of which will work to make arepas. You can find arepa flour in the international section of most supermarkets—the two most popular brands are P.A.N. and Goya.    Moistening your hands with a bit of water helps prevent the dough from sticking to them. If the outer edges of the arepas crack when pressed, your dough is too dry; moisten your hands with water, shape the dough back into a ball and press again. If the dough won't hold its shape, it is too wet; add arepa flour 1 Tbsp. at a time and mix again.    To make ahead: Cook chicken (Step 2), cover and refrigerate for up to 2 days.

Frying rice usually needs a generous amount of oil to get all the mixed flavours coated into each grain of rice. Oil adds a lot more flavour and makes a shiny presentation more appetising. So every take out fried rice of every kind, usually has a lot more oil, butter or lard for that repeat order.
Except one.
In Sarawak, Malaysia, ‘nasi aruk’ is a simple, traditional Malay fried rice commonly served for breakfast. The signature taste and flavour come from omitting oil in the ingredients list.
The protein of choice are ‘ikan bilis’ (sun dried anchovies) and eggs.
First, the ikan bilis is toasted till crispy in a heated pan. No oil is used. Set aside.
In the same heated pan, at smoking point, add sliced shallots and chilies to toast till slightly charred and fragrant. Toss the overnight, cold rice into the pan.
Press the rice mixture onto the smoking hot pan and fry until the rice is properly infused in the smoked flavours and the rice is slightly crisps and brown. Leave the centre of the pan empty and crack the eggs in. Again, no oil is added at all.
Fry until the eggs are cooked and rice is crisps. Traditionally, charcoal or wood fire is used to impart the smoky aroma. The ingredients are simple but the cooking process is meticulous with extra care not to burn the dish.
For better control, I use small fire all the way but the heat is buildup to a smoking point so the ingredients do not stick to the pan despite no oil is used. Avocado slices or steamed ‘dabai’ (Sarawak’s black olive) make a good pairing for a rich, creamy healthy sides.

Healthy breakfast 23: Original recipes from vegetables and microgreens

Vegetable loaves

For 2 servings
Fresh broccoli 6.35oz Dry spices to taste Almond flour 3.53oz Coconut oil 1 tablespoon Egg 1 pc. Salt/pepper to taste Dry garlic to taste Microgreens 1 tablespoon
Instruction:
Chop the broccoli in a blender until it is mushy, and put it in a bowl. Add almond flour, coconut oil, and egg. Bring to taste with spices. Form the finished dough into a ball and let it rest for 10-15 minutes in the refrigerator. Line the baking sheet with parchment, lay out the dough, and smooth it out with medium-thick hands. Bake at 392F for about 15 minutes. Cut the finished tortilla into portions. Store for up to 3 days in the refrigerator.
Cauliflower Carpaccio

For 4 servings

For the sauce:

For a serving, there is 6.35oz cabbage, 2 tablespoons of sauce, 1 teaspoon of truffle oil, paprika, and microgreens for decoration.
Instruction:
For the sauce, combine all the ingredients, and mix. Cut the cauliflower into thin slices. Place on a plate with a slide. Pour the prepared sauce over it. Garnish with paprika and salad microgreens.
Avocado Sandwich

For the waffle:
Zucchini 5.29oz Spinach s / m 3.53oz Cauliflower 3.53oz Celery stalk 1.76oz Olive oil 1 tablespoon Rice flour 1.76oz Salt to taste Rosemary to taste Microgreens 1 tablespoon
For the filling:
Avocado 4.23oz (pre-skip in a blender with lemon juice 1 teaspoon) Dried tomatoes 1.76oz
Instruction:
Mix all the ingredients in a blender. Grease the waffle iron with oil and bake the waffles until ready. Whisk the avocado with lemon juice in a blender. We cut the finished waffles crosswise into two triangles. Put the avocado puree and dried tomatoes on half of the waffle and cover with the second half on top. Decorate the dish with microgreens

Instruction:
Put all the ingredients in a blender and whisk until a homogeneous mush is obtained, 2-4 minutes, depending on the strength of the blender. Decorate the dish with microgreens.
