Chimoto, Tokyo:
1) an-kuzu (lit. sweet bean paste-kudzu) [upper]
2) kuzu-yaki (toasted ‘kudzu [Japanese arrowroot]’)
——–
1) The combination of ‘an (sweet bean paste)’ and 'kuzu (kudzu/Japanese arrowroot starch)’. Simple but tasty … and very soft.
2) Japanese cake made (generally) by steaming the mixture of 'kudzu’-starch, sugar, sweet bean paste and so on, cutting the mixture into pieces, coating each of the pieces with wheat flour and toasting it.
