Organic Chewy Pecan Chocolate Chip Cookies
(Recipe by Andria Naseski)
INGREDIENTS: ¾ cups of melted organic unsalted butter (cooled slightly) 1 cup organic brown sugar ¼ cup organic raw sugar cane 1 tbs organic Madagascar vanilla extract 1 Egg 1 Egg yolk 2 cups organic all purpose flour ½ tsp organic baking soda ½ tsp salt 1 cup of organic dark chocolate chips ½ cup of organic chopped pecans
INSTRUCTIONS: Preheat oven to 325 degrees F. Line cookie sheet with parchment paper.
In a stand mixer, cream together the melted butter and sugars until well blended. Bean in egg, egg yolk and vanilla and until light and creamy. In a separate bowl, sift flour, salt and baking soda together. Mix the sifted ingredients with the butter mixture until just blended. Remove from stand mixer and stir in chocolate chips with a wooden spoon.
Put Mixture in the fridge for 15-30 mins so the butter cools slightly (otherwise your cookies will fall flat when baking).
Place a small ball of cookie dough using a spoon onto the cookie sheet - 2 inches apart and bake for 11-14 mins until golden brown. Do not over back the cookies are meant to be a little chewy. Cool on sheet for a few mins before transferring to a wire rack to completely cool.

I made this chocolate tart for my boyfriend, Zach. He’s a huge chocolate fan. Like, really huge. The bold chocolate flavor is complemented by the crispy, mild almond coconut crust and sweet strawberries. It’s the perfect treat to make for a special occasion or chill night at home. Plus, it’s gluten free and dairy free!
Servings: makes one 8.5-9 inch chocolate tart

Eco-Friendly Alternative to Coffins

Project designers, Anna Citelli and Raoul Bretzel have constructed a biodegradable, organic capsule as an alternative to a coffin called, “The Capsula Mundi.” The purpose of the project is a conceptually and physically beautiful one; it is to reunite the deceased body back with nature and life. After the deceased is buried in a fetal position inside the pod, a tree seed or tree will be planted above the capsule. Within time the body’s nutrients will nurture the ground, causing a tree to grow from the remains. 
Instead of harming the environment by chopping down trees for wooden coffins and burying them, the project’s aim is to promote green cemeteries adorned with trees, you can chose. Originally conceived in Italy, the project is a working theory at the moment because Italian law forbids this type of burial. The goal is to comfort loved ones with a majestic body of nature they can visit. “A cemetery will no longer be full of tombstones and will become a sacred forest.”

Omar Khadr, a sixteen year old Guantanamo Bay detainee weeps uncontrollably, clutching at his face and hair as he calls out for his mother to save him from his torment. “Ya Ummi, Ya Ummi (Oh Mother, Oh Mother),” he wails repeatedly, hauntingly with each breath he takes.
The surveillance tapes, released by Khadr’s defence, show him left alone in an interrogation room for a “break” after he tried complaining to CSIS (Canadian Security Intelligence Service) officers about his poor health due to insufficient medical attention. Ignoring his complaints and trying to get him to make false confessions, the officers get frustrated with the sixteen year old’s tears and tell him to get himself together by the time they come back from their break.
“You don’t care about me. Nobody cares about me,” he sobs to them.
The tapes show how the officers manipulated Khadr into thinking that they were helping him because they were also Canadian and how they taunted him with the prospect of home (Canada), (good) food, and familial reunion.
Khadr, a Canadian, was taken into US custody at the age of fifteen, tortured and refused medical attention because he wouldn’t attest to being a member of Al Qaeda, even though he was shot three times in the chest and had shrapnel embedded in his eyes and right shoulder. As a result, Khadr’s left eye is now permanently blind, the vision in his right eye is deteriorating, he develops severe pain in his right shoulder when the temperature drops, and he suffers from extreme nightmares.
He has been incarcerated at Guantanamo Bay since 2002, suffering extremely harsh interrogations and torture (methods), and is now 25 years old.
