One year ago today I made my first Taco Dragon and sent it into @nikkydash.
I decided to come back with an improved burrito with my own Lo Mein to create: The Lo Mein Burrito 2.0.
First start with making the marinade for the pork.
•Pork
•Garlic
•Honey
•Sesame Oil
•Soy Sauce
•Black Pepper
•Sugar
•Chinese 5 Spice
•Hoisin Sauce
•Fish Sauce
•Mirin
Combine all the ingredients in a plastic bag and let it marinate overnight. When the time comes, throw them on the grill.
Up next is the Lo Mein.
Lo Mein ingredients:
•Noodles
•Garlic
•Red Bell Pepper
•Mushroom
•Olive Oil
•Baby Spinach
Sauce ingredients:
•Sriracha
•Sesame Oil
•Fish Sauce
•Soy Sauce
•Sugar
Combine all the sauce ingredients together and set aside. Then cook the noodles based on their instructions. In a wok, grease it with some olive oil and cook the cut mushrooms, garlic, baby spinach and bell pepper. Once fragrant, add the cooked noodles and the sauce.
Add the pork, lo mein, and some black beans to a tortilla then lightly fry the outside of the tortilla with some avocado oil.
Can’t believe it has been a year since I sent in that original burrito. My life has completely changed for the better and I haven’t had the amount of time I once did which is why my once weekly posts changed. Thank you everyone who has ever liked or reblogged the cooking posts. And thank you lord bisexual Nikky for putting Lo Mein in a burrito.
I have been going to a trivia game night every Monday night for the last few weeks. My team goes for fun and we never win. But, today we were tied for first going into the final question. The final question was “This animated TV show airs on Disney Channel and stars Wendie Malick” then showed. I still can’t believe it
I have returned (again) a very special Taco Dragon AU today because it is they Super Bowl! And my favorite team for the past 14 years, The Cincinnati Bengals, made it!
The announcement of The Owl House Season 2b and the Jurassic World: Dominion also brought forth some ideas but those are for further down the line.
Here are my Super Bowl and Taco Dragon AU (aka Mexican and Asian) themed dishes that I am serving at my party. I’m against the clock here so I won’t go into tons of detail. @nikkydash
Chorizo Chili Cheese Dip
•Chorizo
•Black Beans
•Diced Tomatoes
•Jalapeño
•Freshly Shredded Cheese
I wanted to do a chili of some kind because in Cincinnati they are famous for their Skyline Chili (skyline chili isn’t that good but you all didn’t hear it from me). This is a perfect dip to have at any party. Some nice heat from the jalapeño gives it a perfect bite with any nacho chip.
Sticky Sauce Waygu Meatballs
•American Waygu Shredded Meat
•Soy Sauce
•Sesame Oil
•Honey
•Sriracha
•Garlic
•Shredded Ginger
It is important to have finger food at any Super Bowl Party and these blew my mind. They have off a rich and deep flavor that I have had to start a second batch of because everyone is eating them.
Bulgogi Sliders
I love Bulgogi and this is quick and easy. Take Hawaiian Rolls and toast them in the oven. Place the Bulgogi. Pull apart and enjoy.
A very quick Taco Dragon but it was fun to do and they are favorites. Hope everything has a good weekend, even if you aren’t watching the big game, and Go Bengals!
Welcome to Halloween/Over the Garden Wall/The Owl House/Taco Dragon AU crossover! @nikkydash
Like most people who have watched this show, I recently did my October rewatch of it and have decided to make it a fun little crossover!
Loaded Potatoes with Molasses
Ingredients:
•Potatoes
• Molasses
•Bacon
•Rice
•Pineapple
•Soy Sauce
•Sesame Oil
•Sour Cream
•Cheese
•Olive Oil
First clean the potatoes, then stab them with a fork about 10 times, then cover it in olive oil. Wrap it in aluminum foil then throw it in the oven until thoroughly cooked through (about one to two hours).
While those are cooking take some rice and cook it in a rice cooker. Take a wok and cook a few scrambled eggs in them. Add the rice then season with Soy Sauce and Sesame Oil to Taste. And add pineapple if you desire.
Take a few strips of bacon and slice them into small pieces then cook them to your desired doneness.
Throw the black beans in a pot and let those heat up while you assemble your potato.
Once your potatoes is cooked through, hollow it out and place the innards in a bowl. Add butter, some bacon bits, salt, and pepper then mix it all together. Now you can put this all together.
Start with a layer of fried rice.
Then add a layer of your potato innards.
Add some black beans, sour cream, and cheese.
Then take some Molasses in a bowl and then dip a bite of your monstrosity.
I loved this potato so much. Somehow everything worked??? I was shocked!
Next weekend is Halloween and I am going to be with my friends so no cooking from me next week! Have a a very fun spooky szn everyone!
It’s time for another cooking inspiration based from @nikkydash’s Taco Dragon AU!
Queso Fundido with Mongolian Beef
First got to start out with the Beef
Ingredients:
•Steak
•Green Onions
•Garlic
•Ginger Root
•Soy Sauce
•Canola Oil
•Brown Sugar
I treated this like bulgogi but with some differences. First, cut the steak into small pieces and let them sit in some soy sauce for a handful of minutes.
Dice up a bunch of garlic cloves and grind up the ginger. Sauté those in a pan with the oil and once it gets fragrant add some soil sauce and brown sugar. Cook that all down until thoroughly combined. Add your meat into the pan and cook the mean within you sauce.
Next is the Queso Fundido.
Ingredients
•Cheese
There really is not much to the basic form of this. Shred a block of cheese and place it into a cast iron skillet then throw it into the oven until the top gets nice and golden brown.
This is where you grab a tortilla, take some cheese and meat, and then top it off with whatever you want! I added some cilantro and a dash of siracha BUT not too much. I wanna taste that cheese!
I’m back (again!) for this weeks @nikkydash’s Taco Dragon AU cooking interpretation. It’s starting to turn into Soup Season and I absolutely love soup which lead to this creation!
Tortilla Soup with Char Siu
First, start by getting your marinade for the pork.
Ingredients:
•Pork
•Garlic
•Soy Sauce
•Honey
•Hoisin Sauce
•Chinese Five Spice
•Oyster Sauce
•Brown Sugar (forgot to add it to picture)
Combine all these ingredients and seal them in a bag an let that marinade for at least a day. When you make the soup that is the time to pull out the pork and throw it on the grill or into the oven.
Next the soup!
Ingredients:
•Chicken Broth
•Corn Tortillas (I accidentally grabbed flour but it worked)
•Vegetable Oil
•Salt and Pepper
•Cilantro
•Onion
•Garlic
•Lime
•Jalapeños
•Can of Black Beans
•Can of diced tomatoes
Start off by dicing up 1/2 the onion, the jalapeños, and a few cloves of garlic. Put some Vegetable Oil in the bottom of whatever you will be making the soup in. Cook the onions by themselves, then add the garlic and jalapeños to let all those flavors to get to know each other.
Add the chicken broth, black beans, and diced tomatoes and let that cook together for about 20-30 minutes. Then juice the limes and add the cilantro into it and let it cook down for about 5-10 more minutes.
Finally, roll up a tortilla and cut it into strips. Then fry them in some oil until they are nice and golden brown.
Assemble these components all together. Top it with some cheese or sour cream. Sit back, relax, and enjoy soup season!
After some time of I am back! I decided to go big for this…literally.
My creation for @nikkydash’s Taco Dragon AU is a 2 pound Bulgogi and Elote Cheese corn burrito!
First, you have to put some white rice into a rice cooker and leave it aside until the very end. Next, it is time to make the bulgogi and I have developed my own personal recipe for this korean beef dish.
My main ingredients:
•Choice of beef
• Garlic
•Green Onions
•Brown Sugar
•Soy Sauce
•Fish Sauce
•Sesame Oil
• Black pepper
•Pear (or alternative fruit)
In terms of ratio of ingredients, this is something that is different for everyone because of all of the unique flavors. At this point, I eye ball the measurements because I make this once a week. For the fruit aspect, pear and apples are usually combined in the sauce but I am allergic to most fruit. But there is one I am perfectly okay to eat and that is what I use as my “secret ingredient”. (pineapple 😉)
When you make the sauce and have the meat marinating, it is time to season the elote. I just used Chili Powder and Cayenne pepper because of what this will go into.
Take your marinated meat and seasoned corn and throw them on the grill to you desired doneness. After you take the meat off the grill, give it time to rest that is one of the most important thing when cooking beef!
While letting the meat rest, it is time to create the cheese sauce. I kept it simple. Butter, flower, and milk base. Then added cream cheese as a thickener. I used 4 different kinds of cheese:
• Cheddar
• Jack
• Feta (a replacement for Cotija because they are close in flavor)
Add the corn once the cheese is melted then season this up with some jalapeños, lime, and some cilantro to help round it out to a nice cheesy elote flavor.
Finally grab one huge tortilla or two large ones and begin assembling.
I layered with rice first, beef, and then a generous pour of the elote cheese sauce. Close it up, pour some more elote cheese sauce, and then freshly shredded cheddar and monterey jack cheese. Throw this in the oven for about 2 minutes to melt the cheese.
Cut a chunk out and grab your favorite salsa to eat this best of a burrito that came out to weighing a little over two pounds. Then dig in and enjoy you food for the next 3 meals!
For this recreation, I went with a strong heat with tons of flavor instead of an extreme flavorless heat. So the first thing I wanted to do was construct a marinade where my goal was to bring in as much flavor as I could.
I was skeptical of the grapefruit juice but my roommate recommended it to me and it was perfect for the final product!
I was planning on smoking these but I wanted to focus on the sauce so I went with oven baking them for about 45 minutes at about 375 flipping around 20 minutes in.
Next, I faced the creation of the hot sauce. It took a few attempts to find somethings flavorful and honestly I don’t remember the exact recipe but I started with:
•Sautéing Garlic and sliced jalapeños
•Adding ketchup, lemon juice, and unsalted butter
•Then once I got those all combined I grabbed a habanero sauce (about 100,000 Scoville) and added it (this is where you’d add you main heat whatever it would be)
The sauce came out a little thick but trust me the heat is there.
I then picked the 3 most esthetic wings (saving the rest for my TD recipe this week) and let them soak in this sauce for a minute or too. I put them back onto the backing sheet and poured some sauce onto to each and threw them back into the oven for about 10 minutes so the heat and get cooked in.
I am not a big heat individual, especially after I destroyed my stomach from spice wings in the past, so my main goal of strong heat but great flavor was very important. These were packed full of flavor so much that I wanted to eat all of them. They were super juicy and the fruity overtone mixed well with the heat! Definitely amazing.
